Allow the roasted sesame seeds and peanuts to cool. Grind them coarsely using a mixer grinder on pulse mode. Avoid grinding too fine, as this may release oil. Transfer the coarse powder to a large bowl.

Reduce the flame to low and add the sesame-peanut mixture to the melted jaggery. Mix well and keep stirring until the mixture thickens and leaves the sides of the pan. This step is quick and easy.
6. Shape the Til Gud Gajak
Pour the prepared mixture onto a greased butter paper or plate. While warm, shape it into a long roll using a rolling pin or your hands. Sprinkle reserved sesame seeds, poppy seeds, and chopped pistachios over the roll. Press gently to make them stick to the surface. Let the roll set for 10 minutes.

- Let the roasted sesame seeds and peanuts cool.
- Grind them coarsely in a mixer using the pulse mode.
- Ensure the mixture is not too fine.
- Transfer the prepared powder to a bowl and add desiccated coconut, milk powder, and cardamom powder.
- Mix all the ingredients thoroughly.
- In the same pan, add 1 tablespoon of ghee and pieces of jaggery.
- Add 2 tablespoons of water and melt the jaggery on low heat.
- Once the jaggery has completely melted and starts bubbling, reduce the heat to low.
- Add the prepared sesame-peanut mixture to the melted jaggery.
- Stir continuously and cook until the mixture thickens and leaves the pan’s sides.
- The mixture will come together into a single lump.
- Transfer the mixture to butter paper (or a greased plate).
- While it’s still warm, roll it into a cylindrical shape using a rolling pin.
- Sprinkle sesame, poppy, and chopped pistachios on top, gently press them into the roll.
- Allow the roll to set for 10 minutes.
- Once set, cut the roll into your desired shapes.
